  • Minerals and trace elements are present in trace amounts, varying according to harvest and batch, including potassium, calcium, magnesium, phosphorus, iron, zinc, copper, manganese, and selenium. Vitamins are also present mainly in trace amounts, especially B vitamins, with a more significant contribution of vitamin E via the seeds and seed purees, depending on the quality of the raw materials.

    Compounds of interest
    Honey polyphenols, organic acids and natural enzymes from honey, lignans and omega 3 (ALA) from flax, omega 6 from sunflower, compounds from sesame (tahini) including sesamin and sesamolin, aromatic compounds from vanilla including vanillin, as well as a fraction of soluble fibers bound to acacia gum.

    Advantages of honey compared to other sugars
    In equal quantities, honey remains a sugar, but it brings a natural complexity, compounds of interest and traces of micronutrients, whereas white or brown sugar is much simpler nutritionally.
